Colombia Antioquia Project Arbora（コロンビア・アンティオキア・プロジェクト・アルボラ）
今回登場するのは、Project Arboraという取り組みのコーヒーです。農園は持たず、自然保護を大切にしているコーヒー農家さんに焦点置いて、彼らのコーヒーの紹介やサポートをするというプロジェクトです。
今回のコーヒーのProcessは、収穫された完熟チェリーを精製所で、水を用いたフローティング選別が行われ、沈んだコーヒーチェリーのみが選ばれます。その後、24時間グレインプロにて、しっかりと口が閉められた状態で保管され、発酵が行われます。翌日袋から取り出されたチェリーは、パルピングと洗浄によってその果皮・果肉やミューシレージが取り除かれます。
綺麗に洗浄されたパーチメントコーヒーは、アフリカンベッドに移動し、重ならないように広げられ、乾燥が進められます。 水分値は約10~11%を基準に終了したのち、すぐには脱殻せずパーチメントコーヒーの状態で保管され出荷の時を待ちます。
Gesha種らしいLemongrassやJasmineのような香りと、HerbやMintを連想する味わいをお楽しみください。
The coffee featured in this issue is from an initiative called Project Arbora. This project focuses on coffee farmers who do not own their own farms, but who value the protection of nature, and introduces and supports their coffees.
For the Process coffees, the ripe cherries are harvested and sorted at the refinery using a water-based floating sorting process to select only sunken cherries. The cherries are then stored at GrainPro for 24 hours with the mouth tightly closed before fermentation takes place. The next day, the cherries are removed from the bags and are pulped and washed to remove their skins, pulp and mucilage.
The cleaned parchment coffee is then moved to the African beds where it is spread out and dried without overlapping. After moisture levels of approximately 10-11% are achieved, the coffee is stored in the parchment state without immediate shelling and awaits shipment.
The aroma is typical of the Gesha variety, with hints of Lemongrass and Jasmine, and the taste is reminiscent of Herb and Mint.
