Colombia Risaralda La Rivera "Sudan Rume"（コロンビア・リサラルダ・ラ・リベラ・スーダン・ルメ）
ColombiaのLa Rivera農園から新しいコーヒーが届きました。
品種はSudan Rume。南スーダンを起源にもち、コーヒーの原種に近い存在の品種です。最近ではその味わいの良さから競技会にも使用されています。
彼らの特徴とも言える特殊Process ”Honey cold press”です。
低温管理を徹底しており、且つHoney Process を使用していることからこの名前がつけられました。
チェリーの収穫と選別後に、グレインプロに移し2〜3日で温度が40〜45度まで上がるよう発酵させます。次に一度取り出して温度を外気温と同じになるまで下げた後、一度タンクで発酵させます。この2回目の発酵は最大4日間かかり、また0〜8度の水を使用しています。最後にHoney Process を行い、水分値10〜11%目処に乾燥が終了です。
彼らの厳密なコントロールにより生み出されたMintやHassakuのような爽やかな味わいと、Honey process 由来の甘さをぜひお楽しみください。
A new coffee has arrived from La Rivera Farm in Colombia.
The variety is Sudan Rume, which originates from South Sudan and is close to the original coffee variety. Recently it has been used in competitions because of its great taste.
The special process "Honey cold press" is their characteristic feature.
The name "Honey Cold Press" comes from the fact that the cherries are kept at a very low temperature and the Honey Process is used.
After the cherries are harvested and sorted, they are transferred to the Grain Pro and fermented at a temperature of 40-45 degrees Celsius for 2 to 3 days. The cherries are then removed and allowed to cool to the same temperature as the outside temperature before being fermented once in tank. This second fermentation takes up to 4 days and uses water at 0 to 8 degrees Celsius. Finally, a honey process is performed and drying is completed at around 10-11% moisture content.
