ColombiaのLa Loma農園からニュープロセスの豆が届きました。
Cold Washed プロセスとは、コーヒーチェリーの糖度25%以上のものを収穫後、グレインプロと呼ばれる袋に入れ、10℃〜14℃に管理した冷蔵庫での76時間の発酵を進めます。この低温な環境によりゆっくりと発酵が進みます。
Jasmine teaやDarjeeling、OrangeやGrape fruitsを思わせる複雑で清涼感を感じさせる味わいを是非お楽しみください。
New Process beans have arrived from La Loma farm in Colombia.
He has been trying to produce coffees with different processes, taking advantage of the awards he has won in numerous competitions.
In the Cold Washed process, coffee cherries with a sugar content of 25% or higher are harvested, placed in bags called grain pro, and fermentation proceeds for 76 hours in a refrigerator controlled at 10-14℃. This low-temperature environment allows fermentation to proceed slowly.
It is complex and refreshing, with hints of jasmine tea, Darjeeling, orange and grape fruits.
